India’s cuisine changes dramatically from one region to another, and this 15-day culinary journey follows that change across the north of the country. It begins in the bustling food lanes of Old Delhi, continues to the Mughlai kitchens of Agra and the royal and vegetarian traditions of Rajasthan, and ends with the refined Awadhi cuisine of Lucknow and the distinctive vegetarian flavours of Varanasi.
Food is not an activity squeezed in between sightseeing — it is the thread that connects the whole journey. Along the way you join guided food walks through local markets, watch cooking demonstrations, cook alongside local chefs and families in hands-on classes, and sit down to traditional meals and heritage dining, with time to meet the artisans who keep these food traditions alive.
Delhi introduces street food and spices. Agra brings Mughlai influences. Rajasthan shows two sides of its table — the royal cuisine of Jaipur and the desert and village cooking of Marwar and Mewar — before Lucknow opens the kitchens of Awadh and Varanasi closes the journey with the vegetarian food culture of one of India’s oldest living cities.
The journey also takes in India’s iconic cultural highlights: the Taj Mahal at sunset and again at sunrise, Fatehpur Sikri, Amber Fort, Mehrangarh Fort, the Jain temples of Ranakpur, a boat ride on Lake Pichola in Udaipur, the Imambaras of Lucknow and the Ganga Aarti on the ghats of Varanasi.
Discovery Full Circle Tours tailors the culinary experiences, hotels, restaurants, cooking classes and sightseeing to each traveller’s interests and budget, and can plan every meal around vegetarian, vegan, Jain, halal, gluten-free or other dietary requirements.
